Ethiopia · Yirgacheffe · Washed
Bergamot, white peach, jasmine. The flagship, and the one the roastery is named for — delicate enough that you have to slow down to catch it.

Medium Roast
Colombia · Huila · Washed
Brown sugar, toasted almond, dark cocoa. Full-bodied and forgiving. This is the one to make when you're making a whole pot.

Espresso Roast
Brazil + Guatemala · Blend
Dark chocolate, molasses, walnut. Heavy body, low acidity, built to hold its ground under milk and pressure.

Dark Roast
Sumatra · Wet-hulled
Cedar, dark cocoa, black cherry. Our darkest roast, taken right to the edge and pulled before it turns to ash.

Decaf
Peru · Sugarcane water process
Cocoa, dried fig, soft citrus. No solvents, and good enough to serve in daylight. Its line on the bag is perfectly flat.

Our Name
The name is from 1 Kings 19. Elijah, exhausted and hiding in a cave, is told to go stand on the mountain. A wind comes and splits the rocks. Then an earthquake. Then fire. God isn't in any of them. Then comes what the King James translates as a still small voice — and that's the one he covers his face for.
We named a coffee company after it because the idea holds up outside the passage too: the thing worth paying attention to is usually not the loudest thing in the room. That's a decent philosophy for roasting, where the temptation is always to push darker and louder than the bean wants to go.
If you don't share the faith behind it, nothing here will be pushed at you — it's a coffee company, and the coffee has to be good on its own terms. If you do, you'll notice the five blends walk Elijah's whole sequence, and you'll know why the decaf bag's line is flat.

Each new lot gets three to five test roasts before it ever goes on the site.
We roast against the day's orders. Your bag is stamped with the date it left the drum.

We keep a short wholesale list on purpose — enough accounts to keep the drum busy, few enough that we can dial in your espresso in person. Tell us what you're pouring and we'll send pricing and a sample box.
